I love baking because it’s fun, healthy and saves money, but I rarely have time. To compromise, I’m also looking up recipes for “easy chocolate chip cookies” or “simple healthy pancakes”, things with very few ingredients and very little prep time. That’s how I came across a recipe for 2 ingredient Banana Oatmeal Cookies. I decided to give the recipe a little sprucing with a few more ingredients from my cupboard and VOILA!, PB energy balls!
2 large, ripe, bananas – mashed;
2 cups of oats (or, as I used, 1.5 cups of oats and 1/2 cups of muesli)
1/2 tsp cinnamon
2 TBSP Peanut Butter
1/2 cup of milk chocolate chips
1. Preheat oven to 350 degrees Fahrenheit.
2. In a large bowl, combine oats (and muesli) with mashed banana until smooth.
3. Mix in the chocolate chips, peanut butter and cinnamon.
4. Spray a baking sheet with non-stick spray and drop the mixture in large TBSPs onto the tray. Flatten with spatula (to make them round like the photo, don’t flatten!).
5. Bake for 9-12 minutes.
